Vacuum System There are two vacuum systems on the market. One uses a hand-operated pump that is meant for the home and is impractical in a commercial environment. The other is a single-user, single-location system that utilizes a small electrical pump that is activated for each application. It requires ten seconds or more to properly evacuate a wine one bottle at a time and can be noisy. This is impractical for every pour in a busy environment, unless one installs multiple systems, which becomes expensive. The system is often used only at the end of the night, by which time many wines are already damaged.
